Description

Creamy Cajun salmon pasta packed with bold spices, tender vegetables, and flaky salmon, tossed with penne in a rich Parmesan cream sauce.


Ingredients

  • 2 portions Sizzlefish salmon
  • 2 tbsp olive oil
  • Salt and pepper
  • 8 oz penne pasta
  • 1 tbsp butter
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped yellow onion
  • 1 tsp minced garlic
  • 2 tsp Cajun seasoning
  • 3/4 cup chicken or vegetable stock
  • 2 tbsp tomato paste
  • 1/2 cup heavy cream
  • 2/3 cup freshly grated Parmesan cheese
  • Salt to taste
  • 1/4 cup chopped parsley

Instructions

  1. Pat the salmon dry with a paper towel and season with salt and pepper. Heat olive oil in a skillet over medium heat for about 1 minute.
  2. Add salmon flesh side down and cook for 3 minutes. Flip and cook for another 3 minutes. Remove from heat, cool for 2 minutes, then remove skin and flake into bite-sized pieces.
  3. Cook the penne pasta according to package instructions. Meanwhile, in a large pot or Dutch oven, melt butter over medium heat. Add green pepper, red bell pepper, and onion. Sauté for about 8 minutes until tender, then add garlic and cook for 1 more minute.
  4. Stir in Cajun seasoning, stock, and tomato paste. Bring to a simmer and mix until smooth. Reduce heat to low, then stir in heavy cream and Parmesan cheese. Simmer for 3–4 minutes until the sauce thickens.
  5. Add the cooked pasta and flaked salmon to the sauce. Toss gently to combine and season with salt as needed.
  6. Serve hot, garnished with chopped parsley.

Notes

  • Use vegetable stock for a lighter flavor or chicken stock for a richer base.
  • Adjust Cajun seasoning to control the spice level.
  • Freshly grated Parmesan melts better and gives a smoother sauce.
  • Store leftovers in the refrigerator for up to 2 days and reheat gently.
