Delicate crepes filled with a lightly sweetened cheese mixture, then pan-fried until golden and crisp, perfect for a comforting breakfast or dessert.
Ingredients
- 2 large eggs
- 1 1/3 cups milk
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 1 cup all-purpose flour
- 2 tablespoons unsalted butter, melted and cooled
- 1 lb farmer’s cheese
- 1 large egg
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon vanilla
- 2 tablespoons unsalted butter, melted and cooled
- Butter and vegetable oil, for frying
- Sour cream
- Fresh fruit or berries
- Jam or preserves
- Honey
- Confectioners’ sugar
Instructions
- In a large bowl, whisk together eggs and milk. Add sugar and salt, then gradually whisk in flour until smooth. Stir in melted butter and let batter rest for 20–30 minutes.
- Heat a nonstick skillet over medium heat and lightly butter it. Pour about 1/3 cup batter into the pan, swirling to coat evenly. Cook until set, about 1–2 minutes, flip, and cook another 20–30 seconds. Repeat to make about 8 crepes.
- In a bowl, mix farmer’s cheese, egg, sugar, salt, cinnamon, vanilla, and melted butter until smooth.
- Place about 3 tablespoons filling onto each crepe near the bottom edge. Fold the bottom over the filling, fold in the sides, and roll into a flat package.
- Heat butter and oil in a skillet over medium heat. Fry blintzes seam-side down until golden and crisp, about 2 minutes per side.
- Serve warm with confectioners’ sugar, sour cream, fruit, or jam.
Notes
- Allowing the batter to rest helps create tender crepes.
- Keep crepes lightly colored to maintain flexibility for rolling.
- Blintzes can be assembled ahead and refrigerated for up to 24 hours before frying.
- Substitute ricotta for farmer’s cheese if needed.
