Description

Delicate crepes filled with a lightly sweetened cheese mixture, then pan-fried until golden and crisp, perfect for a comforting breakfast or dessert.


Ingredients

  • 2 large eggs
  • 1 1/3 cups milk
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 2 tablespoons unsalted butter, melted and cooled
  • 1 lb farmer’s cheese
  • 1 large egg
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla
  • 2 tablespoons unsalted butter, melted and cooled
  • Butter and vegetable oil, for frying
  • Sour cream
  • Fresh fruit or berries
  • Jam or preserves
  • Honey
  • Confectioners’ sugar

Instructions

  1. In a large bowl, whisk together eggs and milk. Add sugar and salt, then gradually whisk in flour until smooth. Stir in melted butter and let batter rest for 20–30 minutes.
  2. Heat a nonstick skillet over medium heat and lightly butter it. Pour about 1/3 cup batter into the pan, swirling to coat evenly. Cook until set, about 1–2 minutes, flip, and cook another 20–30 seconds. Repeat to make about 8 crepes.
  3. In a bowl, mix farmer’s cheese, egg, sugar, salt, cinnamon, vanilla, and melted butter until smooth.
  4. Place about 3 tablespoons filling onto each crepe near the bottom edge. Fold the bottom over the filling, fold in the sides, and roll into a flat package.
  5. Heat butter and oil in a skillet over medium heat. Fry blintzes seam-side down until golden and crisp, about 2 minutes per side.
  6. Serve warm with confectioners’ sugar, sour cream, fruit, or jam.

Notes

  • Allowing the batter to rest helps create tender crepes.
  • Keep crepes lightly colored to maintain flexibility for rolling.
  • Blintzes can be assembled ahead and refrigerated for up to 24 hours before frying.
  • Substitute ricotta for farmer’s cheese if needed.
