Description

These cheesy cauliflower steaks are roasted until golden and tender, then topped with melted mozzarella for a flavorful vegetarian side or light main dish. Simple seasonings and parmesan create a savory, crispy finish.


Ingredients

  • 1/4 cup olive oil
  • 2 tablespoons grated parmesan cheese
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 1 head cauliflower
  • 1/2 cup shredded mozzarella cheese
  • Optional fresh parsley, for garnish

Instructions

  1. Preheat the oven or air fryer to 400° F. Line a baking sheet with parchment paper.
  2. In a small bowl, combine the olive oil, parmesan cheese, onion powder, garlic powder, paprika, salt, and pepper.
  3. Remove the leaves from the cauliflower while keeping the stalk intact. Slice the cauliflower in half, then slice each half again to create steaks.
  4. Place the cauliflower steaks on the prepared baking sheet and brush all sides with the seasoned oil mixture.
  5. Bake for about 20 minutes or air fry for about 15 minutes, flipping halfway through, until the cauliflower is fork tender and golden brown.
  6. Remove from the oven or air fryer and sprinkle the mozzarella cheese evenly over the steaks.
  7. Return to the oven or air fryer for 2 to 3 minutes, or until the cheese is melted. Garnish with fresh parsley if desired and serve warm.

Notes

  • Use freshly grated parmesan for the best flavor and texture.
  • Cauliflower steaks may break apart slightly; smaller florets can still be roasted alongside the steaks.
  • For extra crispiness, broil the steaks for 1 to 2 minutes after adding the cheese.
  • Serve with marinara sauce, ranch dressing, or a side salad for a complete meal.
