Description

Juicy Mediterranean-style chicken kabobs marinated in a bright lemon herb dressing and grilled with colorful vegetables.


Ingredients

  • 6 long Bamboo skewers (or metal skewers)
  • 1 lb Boneless skinless chicken breast (cut into 1.5 inch pieces)
  • 2 large Bell peppers (cut into 1.5 inch pieces)
  • 2 medium Zucchini (sliced into 1/2 inch rounds)
  • 1 large Red onion (cut into 1.5 inch pieces)
  • 1/2 cup Olive oil
  • 1/2 cup Lemon juice
  • 2 cloves Garlic (minced)
  • 2 tbsp Fresh dill (chopped)
  • 2 tbsp Fresh parsley (chopped)
  • 1 tbsp Sea salt
  • 1/2 tsp Black pepper

Instructions

  1. If using bamboo skewers, soak them in water for 30–60 minutes to prevent burning.
  2. In a small bowl, whisk together olive oil, lemon juice, garlic, dill, parsley, sea salt, and black pepper.
  3. Thread chicken and vegetables onto skewers, alternating pieces.
  4. Place skewers in a dish and pour marinade over them. Cover and refrigerate for at least 30 minutes.
  5. Preheat grill to medium-high heat.
  6. Grill kabobs for 5–8 minutes per side with the lid closed, until chicken is fully cooked.

Notes

  • You can substitute chicken thighs for juicier kabobs.
  • Serve with rice, pita, or a fresh salad.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • Metal skewers do not require soaking.
