Description
This Chicken Pesto Caprese Sandwich is packed with juicy seasoned chicken, creamy mozzarella, fresh tomatoes, and vibrant pesto on toasted ciabatta rolls. It is a warm and satisfying sandwich perfect for lunch or dinner.
Ingredients
- 2 large boneless, skinless chicken breasts (approximately 1 pound)
- 1 tablespoon Italian seasoning
- Salt, to taste
- Freshly cracked black pepper, to taste
- 1 tablespoon avocado oil
- 4 ciabatta rolls, sliced in half horizontally
- 4 tablespoons mayonnaise, divided, optional
- 1/3 cup pesto, divided
- 6 ounces fresh mozzarella, sliced
- 4 Roma tomatoes, sliced
- Additional avocado oil for brushing
Instructions
- Slice the chicken breasts horizontally to create 4 evenly sized cutlets. Pound thicker areas if needed so they cook evenly.
- Season both sides of the chicken cutlets with Italian seasoning, salt, and black pepper.
- Heat a large skillet over medium-high heat. Add 1 tablespoon avocado oil and heat until shimmering.
- Add the chicken cutlets to the skillet and cook for 3 to 5 minutes per side, or until the internal temperature reaches 160°F.
- Transfer cooked chicken to a plate and let rest.
- Place the ciabatta roll halves cut-side down in the skillet and toast for 1 to 2 minutes until lightly golden.
- Spread 1 tablespoon mayonnaise on one half of each roll and spread pesto on the other half.
- Place one chicken cutlet on each mayonnaise-coated roll half.
- Top each sandwich with sliced mozzarella and tomato slices.
- Close the sandwiches with the pesto-coated ciabatta halves.
- Lightly brush the tops of the sandwiches with avocado oil.
- Place sandwiches in the skillet and cook for 2 minutes per side until the bread is toasted and the mozzarella is melted.
- Serve immediately while warm.
Notes
- Fresh basil leaves make a great addition for extra Caprese flavor.
- You can substitute sourdough or focaccia if ciabatta rolls are unavailable.
- Use store-bought or homemade pesto depending on preference.
