Description

This Chicken Pesto Caprese Sandwich is packed with juicy seasoned chicken, creamy mozzarella, fresh tomatoes, and vibrant pesto on toasted ciabatta rolls. It is a warm and satisfying sandwich perfect for lunch or dinner.


Ingredients

  • 2 large boneless, skinless chicken breasts (approximately 1 pound)
  • 1 tablespoon Italian seasoning
  • Salt, to taste
  • Freshly cracked black pepper, to taste
  • 1 tablespoon avocado oil
  • 4 ciabatta rolls, sliced in half horizontally
  • 4 tablespoons mayonnaise, divided, optional
  • 1/3 cup pesto, divided
  • 6 ounces fresh mozzarella, sliced
  • 4 Roma tomatoes, sliced
  • Additional avocado oil for brushing

Instructions

  1. Slice the chicken breasts horizontally to create 4 evenly sized cutlets. Pound thicker areas if needed so they cook evenly.
  2. Season both sides of the chicken cutlets with Italian seasoning, salt, and black pepper.
  3. Heat a large skillet over medium-high heat. Add 1 tablespoon avocado oil and heat until shimmering.
  4. Add the chicken cutlets to the skillet and cook for 3 to 5 minutes per side, or until the internal temperature reaches 160°F.
  5. Transfer cooked chicken to a plate and let rest.
  6. Place the ciabatta roll halves cut-side down in the skillet and toast for 1 to 2 minutes until lightly golden.
  7. Spread 1 tablespoon mayonnaise on one half of each roll and spread pesto on the other half.
  8. Place one chicken cutlet on each mayonnaise-coated roll half.
  9. Top each sandwich with sliced mozzarella and tomato slices.
  10. Close the sandwiches with the pesto-coated ciabatta halves.
  11. Lightly brush the tops of the sandwiches with avocado oil.
  12. Place sandwiches in the skillet and cook for 2 minutes per side until the bread is toasted and the mozzarella is melted.
  13. Serve immediately while warm.
