Description

This Cilantro Lemon Soup is a light, nourishing broth packed with fresh herbs, garlic, ginger, and bright lemon flavor. It’s warming, refreshing, and perfect as a simple soup or soothing sipping broth.


Ingredients

  • 1 tbsp olive oil
  • 6 cloves garlic, minced
  • 1 yellow onion, minced
  • 1 inch ginger, peeled and minced
  • 1½ tsp turmeric
  • 1 tsp salt, adjust to taste
  • 1 small bunch cilantro, diced
  • 1 small bunch parsley, diced
  • 6 cups water
  • Black pepper, to taste
  • 1 lemon, juiced

Instructions

  1. Heat the olive oil in a pot over medium heat.
  2. Add the garlic, onion, and ginger. Sauté for 2 to 3 minutes until fragrant.
  3. Stir in the turmeric and salt until evenly combined.
  4. Add the cilantro, parsley, and water. Bring the soup to a boil.
  5. Reduce the heat and let the soup simmer for 5 to 8 minutes.
  6. Finish with black pepper and lemon juice. Taste and adjust the salt if needed.
  7. Serve warm as a light soup or sipping broth.

Notes

  • For a richer broth, substitute vegetable broth for water.
  • Add cooked rice, lentils, or chickpeas to make it more filling.
