Description

Ingredients
- 1 tbsp olive oil
- 6 cloves garlic, minced
- 1 yellow onion, minced
- 1 inch ginger, peeled and minced
- 1½ tsp turmeric
- 1 tsp salt, adjust to taste
- 1 small bunch cilantro, diced
- 1 small bunch parsley, diced
- 6 cups water
- Black pepper, to taste
- 1 lemon, juiced
Instructions
- Heat the olive oil in a pot over medium heat.
- Add the garlic, onion, and ginger. Sauté for 2 to 3 minutes until fragrant.
- Stir in the turmeric and salt until evenly combined.
- Add the cilantro, parsley, and water. Bring the soup to a boil.
- Reduce the heat and let the soup simmer for 5 to 8 minutes.
- Finish with black pepper and lemon juice. Taste and adjust the salt if needed.
- Serve warm as a light soup or sipping broth.
Notes
- For a richer broth, substitute vegetable broth for water.
- Add cooked rice, lentils, or chickpeas to make it more filling.
- This soup is best enjoyed fresh but can be refrigerated for up to 3 days.
