Ingredients
- 1 stick (8 tablespoons) salted butter, melted
- 3/4 cup brown sugar
- 3/4 cup plain Greek yogurt
- 3 eggs, at room temperature
- 2 teaspoons vanilla extract
- 1 1/2 cups whole wheat or all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup finely chopped peaches
- 3 tablespoons peach jam
- 1/2 cup dark brown sugar
- 2 tablespoons all-purpose flour
- 1 tablespoon cinnamon
- 2 tablespoons salted butter, melted
Instructions
- Preheat the oven to 350°F. Line a 9×5 inch bread pan with parchment paper.
- In a bowl, whisk together the melted butter, brown sugar, yogurt, eggs, and vanilla extract until smooth.
- Add the flour, baking powder, and salt. Mix until fully combined, then fold in the chopped peaches.
- Pour the batter into the prepared pan and swirl in the peach jam, leaving streaks throughout.
- In a separate bowl, mix the dark brown sugar, flour, cinnamon, and melted butter to form a crumbly mixture.
- Sprinkle the cinnamon mixture over the batter in clumps.
- Bake for 55–60 minutes, or until the center is set. If the top browns too quickly, cover loosely with foil.
- Remove from the oven, let cool slightly, then slice and serve.
Notes
- Use ripe, fresh peaches for the best flavor, or substitute with canned peaches (drained).
- Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
- Can be frozen for up to 2 months; thaw before serving.
- Serve warm with butter or a sprinkle of flaky sea salt for extra flavor.
