Description

Ingredients

  • 1 stick (8 tablespoons) salted butter, melted
  • 3/4 cup brown sugar
  • 3/4 cup plain Greek yogurt
  • 3 eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups whole wheat or all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup finely chopped peaches
  • 3 tablespoons peach jam
  • 1/2 cup dark brown sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon cinnamon
  • 2 tablespoons salted butter, melted

Instructions

  1. Preheat the oven to 350°F. Line a 9×5 inch bread pan with parchment paper.
  2. In a bowl, whisk together the melted butter, brown sugar, yogurt, eggs, and vanilla extract until smooth.
  3. Add the flour, baking powder, and salt. Mix until fully combined, then fold in the chopped peaches.
  4. Pour the batter into the prepared pan and swirl in the peach jam, leaving streaks throughout.
  5. In a separate bowl, mix the dark brown sugar, flour, cinnamon, and melted butter to form a crumbly mixture.
  6. Sprinkle the cinnamon mixture over the batter in clumps.
  7. Bake for 55–60 minutes, or until the center is set. If the top browns too quickly, cover loosely with foil.
  8. Remove from the oven, let cool slightly, then slice and serve.

Notes

  • Use ripe, fresh peaches for the best flavor, or substitute with canned peaches (drained).
