Description

This creamy mushroom chicken skillet features tender chicken cutlets simmered in a rich garlic mushroom sauce with cream and fresh parsley. It is a comforting and flavorful meal perfect for serving with mashed potatoes and vegetables.


Ingredients

  • 2 chicken breasts (about 600 g), cut into thinner cutlets (4 cutlets in total)
  • Salt and black pepper, to taste
  • 1 large garlic clove, minced
  • 1 tbsp olive oil
  • 1 lb (450 g) mushrooms, sliced
  • 1 tbsp unsalted butter
  • 1 onion, sliced
  • 1 1/2 cup (375 ml) chicken broth
  • 1/2 cup (125 ml) heavy cream (double cream)
  • 1 tbsp plain flour
  • 3 tbsp water
  • Handful fresh parsley, chopped
  • Mashed potatoes, for serving
  • Steamed or fresh vegetables, for serving

Instructions

  1. Season the chicken cutlets with salt, black pepper, and minced garlic. Let them sit for a few minutes while preparing the remaining ingredients.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the chicken and cook for 2–3 minutes per side until lightly golden. Remove from the pan and set aside.
  3. In the same skillet, melt the butter. Add the sliced mushrooms and onion, season with salt and black pepper, and cook for about 5 minutes until softened and most of the moisture has evaporated.
  4. Pour in the chicken broth and heavy cream. Stir well. Mix the flour with water to create a slurry, then stir it into the skillet. Simmer for several minutes until the sauce thickens slightly.
  5. Add the chopped parsley and return the chicken to the skillet. Simmer for 3–5 minutes until the chicken is cooked through and coated in the creamy sauce.
  6. Serve hot with mashed potatoes and steamed or fresh vegetables.

Notes

  • Use chicken thighs instead of chicken breasts for a juicier variation.
  • Cremini or button mushrooms work well in this recipe.
  • Add a splash of white wine for extra depth of flavor.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
