Description
Creamy Tuscan Ravioli is a quick and indulgent pasta dish featuring tender ravioli tossed in a rich garlic cream sauce with sun-dried tomatoes, spinach, and parmesan. Perfect for an easy yet satisfying meal.
Ingredients
- 2 tbsp unsalted butter
- 3 cloves garlic, finely diced
- 1 tbsp tomato puree
- 120 ml chicken stock
- 240 ml heavy or double cream (room temperature)
- 1/4 tsp smoked paprika
- 1/4 tsp dried oregano
- 1/2 small bunch fresh basil, roughly chopped (15 g)
- 40 g freshly grated Parmesan, plus more to serve
- 125 g sun-dried tomatoes, thinly sliced
- 100 g baby spinach leaves
- 500 g ravioli
- Salt and pepper, to taste
Instructions
- Melt the butter in a large pan over medium heat. Add the garlic and cook until lightly golden, being careful not to burn it. Stir in the tomato puree and cook for about 1 minute.
- Add the chicken stock, cream, smoked paprika, oregano, and a pinch of salt and pepper. Stir in the sun-dried tomatoes, basil, and Parmesan. Bring to a gentle simmer and cook for about 5 minutes, stirring frequently, until the sauce thickens. Adjust seasoning if needed, then stir in the spinach until wilted.
- Meanwhile, cook the ravioli in salted boiling water for 1 minute less than package instructions. Drain well.
- Add the drained ravioli to the sauce and gently toss until well coated and the sauce clings to the pasta. Serve immediately with extra Parmesan if desired.
Notes
- Use cheese, spinach, or meat-filled ravioli depending on preference.
- If the sauce becomes too thick, loosen it with a splash of pasta water or extra stock.
- Sun-dried tomatoes in oil add extra flavor, but drained ones also work well.
- Store leftovers in the refrigerator for up to 3 days and reheat gently.
