Description

Creamy Tuscan Ravioli is a quick and indulgent pasta dish featuring tender ravioli tossed in a rich garlic cream sauce with sun-dried tomatoes, spinach, and parmesan. Perfect for an easy yet satisfying meal.


Ingredients

  • 2 tbsp unsalted butter
  • 3 cloves garlic, finely diced
  • 1 tbsp tomato puree
  • 120 ml chicken stock
  • 240 ml heavy or double cream (room temperature)
  • 1/4 tsp smoked paprika
  • 1/4 tsp dried oregano
  • 1/2 small bunch fresh basil, roughly chopped (15 g)
  • 40 g freshly grated Parmesan, plus more to serve
  • 125 g sun-dried tomatoes, thinly sliced
  • 100 g baby spinach leaves
  • 500 g ravioli
  • Salt and pepper, to taste

Instructions

  1. Melt the butter in a large pan over medium heat. Add the garlic and cook until lightly golden, being careful not to burn it. Stir in the tomato puree and cook for about 1 minute.
  2. Add the chicken stock, cream, smoked paprika, oregano, and a pinch of salt and pepper. Stir in the sun-dried tomatoes, basil, and Parmesan. Bring to a gentle simmer and cook for about 5 minutes, stirring frequently, until the sauce thickens. Adjust seasoning if needed, then stir in the spinach until wilted.
  3. Meanwhile, cook the ravioli in salted boiling water for 1 minute less than package instructions. Drain well.
  4. Add the drained ravioli to the sauce and gently toss until well coated and the sauce clings to the pasta. Serve immediately with extra Parmesan if desired.

Notes

  • Use cheese, spinach, or meat-filled ravioli depending on preference.
  • If the sauce becomes too thick, loosen it with a splash of pasta water or extra stock.
  • Sun-dried tomatoes in oil add extra flavor, but drained ones also work well.
  • Store leftovers in the refrigerator for up to 3 days and reheat gently.
