Description

A crispy baked catfish po’boy layered with fresh greens and a tangy homemade pepper relish. This lighter take on a classic sandwich delivers bold flavor with a satisfying crunch.


Ingredients

  • 2 catfish fillets, thawed
  • 1 egg
  • 2/3 cup cassava flour
  • 1/8 cup coconut flour
  • 1 tablespoon paprika
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 sandwich rolls of choice, sliced in half
  • 1 cup mixed greens, divided
  • 1/2 cup red onions, sliced
  • 2 red bell peppers, diced finely
  • 1/2 cup onion, diced finely
  • 1/2 cup white wine vinegar
  • 1/2 cup red wine vinegar
  • 1 1/2 teaspoons red pepper flakes
  • 1/2 teaspoon salt

Instructions

  1. Add diced red bell peppers, diced onion, white wine vinegar, red wine vinegar, red pepper flakes, and salt to a skillet. Cook on high heat for 5 minutes.
  2. Stir occasionally and continue cooking for 7 to 8 minutes until most of the moisture has evaporated. Remove from heat.
  3. Allow the relish to cool slightly, then transfer to a glass dish and refrigerate until chilled.
  4. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  5. In one bowl, whisk the egg. In another bowl, mix cassava flour, coconut flour, paprika, onion powder, salt, and pepper.
  6. Dip each catfish fillet into the egg, then coat thoroughly in the flour mixture, pressing to adhere. Place on the prepared baking sheet.
  7. Bake for 25 to 30 minutes until the fish is crispy and golden brown.
  8. Assemble the sandwiches by placing mixed greens on the bottom of each roll, topping with a catfish fillet, spooning over the chilled relish, and finishing with sliced red onions. Serve immediately.

Notes

  • For extra crispiness, lightly spray the coated fish with cooking spray before baking.
  • You can substitute lettuce for mixed greens if preferred.
  • The relish can be made ahead and stored in the refrigerator for up to 3 days.
