Ingredients
- 2 catfish fillets, thawed
- 1 egg
- 2/3 cup cassava flour
- 1/8 cup coconut flour
- 1 tablespoon paprika
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 sandwich rolls of choice, sliced in half
- 1 cup mixed greens, divided
- 1/2 cup red onions, sliced
- 2 red bell peppers, diced finely
- 1/2 cup onion, diced finely
- 1/2 cup white wine vinegar
- 1/2 cup red wine vinegar
- 1 1/2 teaspoons red pepper flakes
- 1/2 teaspoon salt
Instructions
- Add diced red bell peppers, diced onion, white wine vinegar, red wine vinegar, red pepper flakes, and salt to a skillet. Cook on high heat for 5 minutes.
- Stir occasionally and continue cooking for 7 to 8 minutes until most of the moisture has evaporated. Remove from heat.
- Allow the relish to cool slightly, then transfer to a glass dish and refrigerate until chilled.
- Preheat the oven to 375°F and line a baking sheet with parchment paper.
- In one bowl, whisk the egg. In another bowl, mix cassava flour, coconut flour, paprika, onion powder, salt, and pepper.
- Dip each catfish fillet into the egg, then coat thoroughly in the flour mixture, pressing to adhere. Place on the prepared baking sheet.
- Bake for 25 to 30 minutes until the fish is crispy and golden brown.
- Assemble the sandwiches by placing mixed greens on the bottom of each roll, topping with a catfish fillet, spooning over the chilled relish, and finishing with sliced red onions. Serve immediately.
Notes
- For extra crispiness, lightly spray the coated fish with cooking spray before baking.
- You can substitute lettuce for mixed greens if preferred.
- The relish can be made ahead and stored in the refrigerator for up to 3 days.
- Adjust red pepper flakes to control the heat level.
