Description
Crispy golden chicken breasts topped with a fresh Caprese-style salad of marinated tomatoes, mozzarella, and basil. Finished with a drizzle of balsamic glaze, this dish is vibrant, crunchy, and full of flavor.
Ingredients
- 2 x 200g/7oz chicken breasts
- 35g / 1/4 cup plain flour
- 2 eggs, beaten
- 75g / 1 1/4 cup panko breadcrumbs
- 1 1/2 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp black pepper
- 120ml / 1/2 cup olive oil (or as needed)
- Flaky sea salt (optional, for serving)
- 200g / 7oz baby plum tomatoes, quartered
- 200g / 7oz mini mozzarella pearls
- 1/2 small bunch fresh basil, roughly torn or sliced
- 2 tsp extra virgin olive oil
- 2 tsp red wine vinegar
- 1/2 small clove garlic, finely grated (optional)
- 1/4 tsp salt
- 1/8 tsp black pepper
- Balsamic glaze, for serving
Instructions
- In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, garlic, salt, and pepper. Add the tomatoes and toss to coat, then set aside to marinate.
- Place each chicken breast between two sheets of cling film and pound to an even thickness using a rolling pin or mallet.
- In a small bowl, mix together the Italian seasoning, salt, onion powder, garlic powder, and black pepper.
- Prepare three shallow dishes: one with the flour mixed with half of the seasoning, one with the beaten eggs, and one with the panko breadcrumbs mixed with the remaining seasoning.
- Coat each chicken breast in the flour, then dip in the egg, and finally coat thoroughly in the panko breadcrumbs.
- Heat the olive oil in a large pan over medium-high heat until hot (about 180°C/350°F). Fry the chicken for 3–4 minutes per side until golden, crispy, and cooked through (internal temperature 74°C/165°F).
- Transfer the chicken to a wire rack and sprinkle lightly with flaky sea salt.
- Toss the basil and mozzarella with the marinated tomatoes.
- Serve the crispy chicken topped with the tomato, mozzarella, and basil mixture, and drizzle with balsamic glaze.
Notes
- Use fresh mozzarella pearls for best texture, or chop larger mozzarella into small pieces.
- Adjust frying time depending on thickness of the chicken.
- For a lighter version, the chicken can be baked or air fried instead of pan-fried.
