Description

Crispy golden chicken breasts topped with a fresh Caprese-style salad of marinated tomatoes, mozzarella, and basil. Finished with a drizzle of balsamic glaze, this dish is vibrant, crunchy, and full of flavor.


Ingredients

  • 2 x 200g/7oz chicken breasts
  • 35g / 1/4 cup plain flour
  • 2 eggs, beaten
  • 75g / 1 1/4 cup panko breadcrumbs
  • 1 1/2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp black pepper
  • 120ml / 1/2 cup olive oil (or as needed)
  • Flaky sea salt (optional, for serving)
  • 200g / 7oz baby plum tomatoes, quartered
  • 200g / 7oz mini mozzarella pearls
  • 1/2 small bunch fresh basil, roughly torn or sliced
  • 2 tsp extra virgin olive oil
  • 2 tsp red wine vinegar
  • 1/2 small clove garlic, finely grated (optional)
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • Balsamic glaze, for serving

Instructions

  1. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, garlic, salt, and pepper. Add the tomatoes and toss to coat, then set aside to marinate.
  2. Place each chicken breast between two sheets of cling film and pound to an even thickness using a rolling pin or mallet.
  3. In a small bowl, mix together the Italian seasoning, salt, onion powder, garlic powder, and black pepper.
  4. Prepare three shallow dishes: one with the flour mixed with half of the seasoning, one with the beaten eggs, and one with the panko breadcrumbs mixed with the remaining seasoning.
  5. Coat each chicken breast in the flour, then dip in the egg, and finally coat thoroughly in the panko breadcrumbs.
  6. Heat the olive oil in a large pan over medium-high heat until hot (about 180°C/350°F). Fry the chicken for 3–4 minutes per side until golden, crispy, and cooked through (internal temperature 74°C/165°F).
  7. Transfer the chicken to a wire rack and sprinkle lightly with flaky sea salt.
  8. Toss the basil and mozzarella with the marinated tomatoes.
  9. Serve the crispy chicken topped with the tomato, mozzarella, and basil mixture, and drizzle with balsamic glaze.

Notes

  • Use fresh mozzarella pearls for best texture, or chop larger mozzarella into small pieces.
  • Adjust frying time depending on thickness of the chicken.
  • For a lighter version, the chicken can be baked or air fried instead of pan-fried.
