Description

Crispy vegan smashed potatoes with golden edges and fluffy centers, seasoned simply for maximum flavor. Perfect as a side dish or snack with your favorite dip.


Ingredients

  • 1 1/2 lb yellow new (baby) potatoes (680g)
  • 2 1/2 tablespoons avocado or olive oil
  • Garlic powder, to taste
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Add a few inches of water to a pot and fit it with a steamer insert. Bring the water to a boil, then reduce heat to medium low. Add the potatoes and steam for about 15 minutes, or until fork-tender.
  2. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment or foil. Lightly brush the sheet with a small portion of the oil.
  3. Place each steamed potato on the baking sheet and use the bottom of a glass to gently smash it to about 1/2-inch (1.3 cm) thickness.
  4. Brush the tops of the smashed potatoes with the remaining oil. Season with garlic powder, salt, and freshly ground black pepper.
  5. Roast in the oven for 35 minutes, or until golden brown and crispy. Serve warm with your favorite dipping sauce.

Notes

  • For extra crispiness, flip the potatoes halfway through roasting.
  • Add paprika or dried herbs for additional flavor variation.
  • Best served fresh, but leftovers can be reheated in the oven to retain crispiness.
