Description
A refreshing and hydrating cucumber agua fresca blended with lime, mint, and ginger for a bright, cooling drink. Perfect for hot days and easy to make in minutes.
Ingredients
- 2 large English cucumbers (cut into chunks)
- 1 cup freshly squeezed lime juice (8–10 limes)
- 2/3 cup granulated sugar
- 10–15 fresh mint leaves
- 1 piece fresh ginger (1–2 inches)
- 4 cups water, divided
Instructions
- Prepare all the ingredients and place them in a blender jar. Add 2 cups of water, cover, and blend until the mixture is very smooth.
- Place a sieve over a pitcher and pour the mixture through to strain out the pulp.
- Add the remaining 2 cups of water to the strained liquid and stir well.
- Cover and chill until ready to serve. Serve cold.
Notes
- Adjust sugar to taste or substitute with honey or a sugar alternative.
- For a stronger mint flavor, add more leaves or muddle before blending.
- Serve over ice for extra refreshment.
- Store in the refrigerator for up to 2 days.
