Description

A refreshing and hydrating cucumber agua fresca blended with lime, mint, and ginger for a bright, cooling drink. Perfect for hot days and easy to make in minutes.


Ingredients

  • 2 large English cucumbers (cut into chunks)
  • 1 cup freshly squeezed lime juice (810 limes)
  • 2/3 cup granulated sugar
  • 1015 fresh mint leaves
  • 1 piece fresh ginger (12 inches)
  • 4 cups water, divided

Instructions

  1. Prepare all the ingredients and place them in a blender jar. Add 2 cups of water, cover, and blend until the mixture is very smooth.
  2. Place a sieve over a pitcher and pour the mixture through to strain out the pulp.
  3. Add the remaining 2 cups of water to the strained liquid and stir well.
  4. Cover and chill until ready to serve. Serve cold.

Notes

  • Adjust sugar to taste or substitute with honey or a sugar alternative.
  • For a stronger mint flavor, add more leaves or muddle before blending.
  • Serve over ice for extra refreshment.
  • Store in the refrigerator for up to 2 days.
