Description

Ingredients

  • 1/2 cup melted butter
  • 1 cup all purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup soy milk
  • 3 cups blackberries
  • 24 tablespoons coarse sugar (optional)
  • whipped cream or vanilla ice cream (for serving)

Instructions

  1. Preheat the oven to 350°F. Pour the melted butter into a 10-inch cast iron pan or a 9×9-inch baking dish.
  2. In a medium bowl, mix the flour, sugar, baking powder, and salt. Stir in the soy milk until just combined.
  3. Pour the batter over the melted butter in the baking dish and smooth into an even layer.
  4. Evenly distribute the blackberries over the top; they will sink slightly during baking.
  5. Sprinkle coarse sugar over the top if using.
  6. Bake for 25–35 minutes, until the edges are golden brown and the center is set. Serve warm with whipped cream or vanilla ice cream.

Notes

  • You can substitute soy milk with almond, oat, or dairy milk.
  • Frozen blackberries can be used; do not thaw before baking.
