Ingredients
- 1/2 cup melted butter
- 1 cup all purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup soy milk
- 3 cups blackberries
- 2–4 tablespoons coarse sugar (optional)
- whipped cream or vanilla ice cream (for serving)
Instructions
- Preheat the oven to 350°F. Pour the melted butter into a 10-inch cast iron pan or a 9×9-inch baking dish.
- In a medium bowl, mix the flour, sugar, baking powder, and salt. Stir in the soy milk until just combined.
- Pour the batter over the melted butter in the baking dish and smooth into an even layer.
- Evenly distribute the blackberries over the top; they will sink slightly during baking.
- Sprinkle coarse sugar over the top if using.
- Bake for 25–35 minutes, until the edges are golden brown and the center is set. Serve warm with whipped cream or vanilla ice cream.
Notes
- You can substitute soy milk with almond, oat, or dairy milk.
- Frozen blackberries can be used; do not thaw before baking.
- Adjust sugar based on the sweetness of the berries.
- Store leftovers in the refrigerator for up to 3 days and reheat before serving.
