Description

These easy cherry pie bars feature a buttery crust layered with sweet cherry filling and finished with a simple glaze. Perfect for gatherings, they deliver classic pie flavor in a convenient bar form.


Ingredients

  • 2 sticks unsalted butter (softened (1 cup))
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 1/2 cups all-purpose flour
  • 1/2 cup almond flour
  • 2 (21 ounce) cans cherry pie filling
  • 1 cup powdered sugar
  • 2 tablespoons milk (or half & half)

Instructions

  1. Preheat the oven to 350°F. Line a 9 x 13 inch baking dish or a 10 x 15 inch jelly roll pan with parchment paper.
  2. Cream the softened butter and sugar together on high speed until light and fluffy, about 3 to 5 minutes. Scrape the bowl, then mix in the eggs, vanilla extract, salt, and cinnamon on low speed.
  3. Scrape the bowl again, then add the all-purpose flour and almond flour. Mix until just combined.
  4. Press 2/3 of the dough evenly into the prepared pan. Spread the cherry pie filling evenly over the crust. Drop small pieces of the remaining dough over the filling.
  5. Bake on the lowest rack for 45 to 50 minutes (9 x 13 pan) or 35 to 45 minutes (jelly roll pan), until the top is golden. Cool completely.
  6. Whisk together powdered sugar and milk. Drizzle over the cooled bars.
  7. Refrigerate until the glaze is set, then cut into squares.
  8. Store covered in the refrigerator until ready to serve.

Notes

  • You can substitute half & half or cream for a richer glaze.
  • Allow bars to cool completely before glazing to prevent melting.
  • Store in the refrigerator for up to 4 days.
