Description
These easy cherry pie bars feature a buttery crust layered with sweet cherry filling and finished with a simple glaze. Perfect for gatherings, they deliver classic pie flavor in a convenient bar form.
Ingredients
- 2 sticks unsalted butter (softened (1 cup))
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 tablespoon vanilla extract
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 1/2 cups all-purpose flour
- 1/2 cup almond flour
- 2 (21 ounce) cans cherry pie filling
- 1 cup powdered sugar
- 2 tablespoons milk (or half & half)
Instructions
- Preheat the oven to 350°F. Line a 9 x 13 inch baking dish or a 10 x 15 inch jelly roll pan with parchment paper.
- Cream the softened butter and sugar together on high speed until light and fluffy, about 3 to 5 minutes. Scrape the bowl, then mix in the eggs, vanilla extract, salt, and cinnamon on low speed.
- Scrape the bowl again, then add the all-purpose flour and almond flour. Mix until just combined.
- Press 2/3 of the dough evenly into the prepared pan. Spread the cherry pie filling evenly over the crust. Drop small pieces of the remaining dough over the filling.
- Bake on the lowest rack for 45 to 50 minutes (9 x 13 pan) or 35 to 45 minutes (jelly roll pan), until the top is golden. Cool completely.
- Whisk together powdered sugar and milk. Drizzle over the cooled bars.
- Refrigerate until the glaze is set, then cut into squares.
- Store covered in the refrigerator until ready to serve.
Notes
- You can substitute half & half or cream for a richer glaze.
- Allow bars to cool completely before glazing to prevent melting.
- Store in the refrigerator for up to 4 days.
