Ingredients
- 1 cup butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 tablespoon vanilla extract
- 2 eggs
- 2 1/4 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 2 cups butterscotch chips
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the softened butter, sugar, and brown sugar until light and fluffy.
- Add the vanilla extract and eggs, mixing well until fully combined.
- In a separate bowl, whisk together flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the butterscotch chips.
- Scoop spoonfuls of dough onto the prepared baking sheet, spacing them evenly.
- Bake for 10–12 minutes or until edges are lightly golden.
- Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For softer cookies, avoid overbaking and remove them when centers are still slightly soft.
- You can substitute chocolate chips or white chocolate chips for variety.
