This easy Moroccan tomato salad is fresh, vibrant, and full of Mediterranean flavor. Juicy tomatoes, herbs, olive oil, and cumin come together in just minutes for a refreshing side dish.
Ingredients
- 1 pound (450g) cherry tomatoes, halved (or regular ripe tomatoes, diced)
- 1/4 red onion, finely chopped
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp cilantro/coriander, finely chopped
- 3 tbsp extra virgin olive oil
- 1/2 tsp ground cumin
- Salt and pepper, to taste
Instructions
- In a large bowl, combine the tomatoes, red onion, parsley, cilantro/coriander, olive oil, cumin, salt, and pepper.
- Stir well until all ingredients are evenly mixed.
- Taste and adjust the seasoning with additional salt and pepper if needed.
- Serve immediately and enjoy.
