Description

This easy Moroccan tomato salad is fresh, vibrant, and full of Mediterranean flavor. Juicy tomatoes, herbs, olive oil, and cumin come together in just minutes for a refreshing side dish.


Ingredients

  • 1 pound (450g) cherry tomatoes, halved (or regular ripe tomatoes, diced)
  • 1/4 red onion, finely chopped
  • 2 tbsp fresh parsley, finely chopped
  • 1 tbsp cilantro/coriander, finely chopped
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp ground cumin
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the tomatoes, red onion, parsley, cilantro/coriander, olive oil, cumin, salt, and pepper.
  2. Stir well until all ingredients are evenly mixed.
  3. Taste and adjust the seasoning with additional salt and pepper if needed.
  4. Serve immediately and enjoy.
