Description

Easy Sheer Khurma is a rich and creamy vermicelli pudding made with milk, nuts, dates, and saffron. This traditional festive dessert is comforting, aromatic, and delicious served warm or chilled.


Ingredients

  • 1/4 cup pistachios
  • 1/4 cup almonds (blanched slices)
  • 1/4 cup cashews
  • 12 pitted dates
  • 2 tablespoons ghee
  • 1/4 cup raisins
  • 1/2 cup thin roasted vermicelli
  • 1/4 cup shredded unsweetened coconut
  • 1 tablespoon white poppy seeds
  • 5 cups low-fat milk, divided
  • 1/4 cup sugar
  • 1 pinch saffron
  • 1 teaspoon vanilla

Instructions

  1. Soak the pistachios in warm water for 10 minutes, then peel and slice thinly. If using whole almonds, soak them in hot water for 10 minutes, peel, and slice thinly. Slice the cashews and dates.
  2. Heat the ghee in an Instant Pot or medium saucepan over medium heat.
  3. Add the almonds, pistachios, cashews, and dates. Roast for 2-3 minutes until fragrant.
  4. Stir in the raisins, roasted vermicelli, shredded coconut, and poppy seeds. Cook for another 1-2 minutes until lightly toasted.
  5. Add 3 cups of milk, sugar, and saffron. Stir well.
  6. For stovetop cooking, simmer on medium heat for 8-10 minutes until the vermicelli is soft and the mixture comes to a gentle boil. For Instant Pot cooking, seal the lid and cook on Manual (Low) for 5 minutes, then allow natural pressure release.
  7. Stir in the vanilla extract.
  8. Add the remaining milk as needed to achieve your preferred consistency.
  9. Bring the sheer khurma to a gentle boil while stirring frequently.
  10. Serve warm or chilled.

Notes

  • Sheer khurma thickens as it cools, so add extra milk before serving if needed.
  • You can adjust the sweetness by increasing or decreasing the sugar.
  • For a richer flavor, use whole milk instead of low-fat milk.
  • Store leftovers in the refrigerator for up to 3 days.
  • Garnish with extra nuts and saffron strands before serving.
