Description

This eggless panettone is soft, fluffy, and filled with citrus flavor and dried fruit. Made without a mold and without kneading, it is an easy homemade holiday bread perfect for breakfast or dessert.


Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 2 1/4 tsp instant yeast
  • 1/2 tsp salt
  • 3/4 cup warm milk
  • 1/4 cup plain yogurt
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp orange zest
  • 1 tsp lemon zest
  • 1/2 cup raisins
  • 1/3 cup candied orange peel
  • 2 tbsp rum or orange juice
  • 1 egg wash substitute or milk for brushing
  • Pearl sugar or sliced almonds for topping

Instructions

  1. Soak the raisins and candied orange peel in rum or orange juice for about 15 minutes.
  2. In a large bowl, combine flour, sugar, instant yeast, and salt.
  3. Add warm milk, yogurt, vegetable oil, vanilla extract, orange zest, and lemon zest. Mix until a sticky dough forms.
  4. Fold in the soaked dried fruit and mix until evenly distributed.
  5. Cover the bowl and let the dough rise in a warm place for 1 1/2 to 2 hours, or until doubled in size.
  6. Transfer the dough into a parchment-lined tall baking pan or cake pan. Smooth the top gently with oiled hands.
  7. Cover and let rise again for 30 to 45 minutes.
  8. Brush the top lightly with milk and sprinkle with pearl sugar or sliced almonds if desired.
  9. Bake in a preheated 350°F (175°C) oven for 35 to 40 minutes, until golden brown and cooked through.
  10. Allow the panettone to cool before slicing and serving.

Notes

  • You can replace raisins with chocolate chips or dried cranberries.
  • If you do not have rum, orange juice works well for soaking the fruit.
  • Store covered at room temperature for up to 3 days.
  • This panettone is delicious toasted and served with butter.
