Description

A rich and savory grilled cheese layered with sharp cheddar, creamy Brie, juicy tomatoes, and a hint of everything bagel spice, all crisped to golden perfection.


Ingredients

  • 1 tomato, thinly sliced
  • sea salt and black pepper
  • 4 slices sourdough bread
  • 3/4 cup grated sharp cheddar cheese
  • 24 ounces torn Brie (rind on)
  • 1/4 cup fresh basil, chopped
  • 4 tablespoons salted butter, at room temperature
  • 1 tablespoon mayo (optional)
  • 2 tablespoons grated asiago cheese
  • 24 tablespoons everything bagel spice (optional)
  • honey, to drizzle (optional)

Instructions

  1. Arrange the tomato slices on a cutting board and sprinkle with salt and pepper. Let sit for 15 minutes to draw out excess moisture.
  2. In a bowl, combine the cheddar, Brie, and basil.
  3. In another bowl, mix the butter, mayo (if using), Asiago, and everything bagel seasoning. Spread this mixture on the outside of each slice of bread.
  4. Assemble the sandwiches by layering the cheese mixture and tomatoes between two slices of bread, keeping the buttered sides facing outward. Repeat to make two sandwiches.
  5. Heat 1–2 tablespoons butter or oil in a large skillet over medium heat. Cook the sandwiches for 3–5 minutes per side until golden brown and crisp.
  6. Drizzle with honey if desired, then serve warm.

Notes

  • Letting the tomatoes rest prevents soggy sandwiches.
  • Brie rind is edible and adds flavor, but can be removed if preferred.
  • Everything bagel seasoning can be store-bought or homemade.
  • Use a lid while cooking for better cheese melting.
