Description

These crispy falafel burgers are packed with herbs, chickpeas, and warm spices for a flavorful vegetarian meal. Baked and lightly pan-seared, they’re hearty, satisfying, and perfect served in a bun with fresh toppings.


Ingredients

  • 1 can chickpeas (15 oz / 400 g can)
  • ¾ cup parsley
  • Optional: ¼ cup cilantro or mint
  • 1 yellow onion, quartered
  • 2 cloves garlic, peeled and chopped
  • ½ cup all-purpose flour
  • 1 teaspoon coriander
  • 1 teaspoon smoked paprika
  • ½ teaspoon cumin
  • ½ teaspoon baking powder
  • 1 teaspoon salt
  • Black pepper to taste
  • 2 tablespoons olive oil, for searing

Instructions

  1. Preheat the oven to 400°F (200°C). Rinse and drain the chickpeas very well.
  2. In a food processor, pulse the parsley, optional cilantro or mint, onion, and garlic until finely chopped.
  3. Add the chickpeas, coriander, smoked paprika, cumin, salt, and black pepper. Pulse in short bursts until the mixture is crumbly but holds together when pressed.
  4. Transfer the mixture to a bowl and stir in the flour and baking powder until a thick dough forms.
  5. Line a baking tray with parchment paper and lightly brush with oil.
  6. Shape the mixture into 4 patties and place them on the tray. Brush the tops lightly with oil.
  7. Bake for 15-18 minutes until the patties are firm and lightly golden.
  8. For extra crispiness, heat olive oil in a skillet over medium-high heat and sear the patties for 1-2 minutes per side until golden brown.
  9. Serve in burger buns with lettuce, tomato, onion, and yogurt tahini sauce if desired.

Notes

  • Drain the chickpeas thoroughly to help the patties hold their shape.
  • For a gluten-free option, substitute all-purpose flour with chickpea flour or oat flour.
  • The patties can be made ahead and refrigerated for up to 2 days before cooking.
  • Serve with fries, salad, or pickled vegetables for a complete meal.
