Description
Filipino Chicken Adobo is a savory and tangy dish where chicken is braised in soy sauce, vinegar, garlic, and spices until tender and flavorful. It is a comforting classic served best with steamed rice.
Ingredients
- 2 pounds chicken thighs or drumsticks
- 1/2 cup soy sauce
- 1/2 cup white vinegar
- 6 cloves garlic (minced)
- 2 bay leaves
- 1 teaspoon whole black peppercorns
- 1 tablespoon cooking oil
- 1 cup water
- 1 teaspoon sugar (optional)
Instructions
- In a bowl, combine the chicken, soy sauce, and half of the garlic. Marinate for at least 30 minutes or up to overnight.
- Heat oil in a large pan over medium heat. Remove chicken from marinade (reserve marinade) and sear until lightly browned on both sides.
- Add the remaining garlic and cook briefly until fragrant.
- Pour in the reserved marinade, vinegar, water, bay leaves, and peppercorns. Do not stir immediately; let it come to a boil.
- Once boiling, lower the heat and simmer for 30 to 35 minutes until the chicken is tender.
- Add sugar if desired and simmer for another 5 minutes. Adjust seasoning to taste.
- Serve hot with steamed rice.
Notes
- Avoid stirring right after adding vinegar to maintain its sharp flavor.
- You can reduce the sauce further for a thicker consistency.
- Leftovers taste even better the next day as flavors deepen.
