Description

Filipino Chicken Adobo is a savory and tangy dish where chicken is braised in soy sauce, vinegar, garlic, and spices until tender and flavorful. It is a comforting classic served best with steamed rice.


Ingredients

  • 2 pounds chicken thighs or drumsticks
  • 1/2 cup soy sauce
  • 1/2 cup white vinegar
  • 6 cloves garlic (minced)
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 1 tablespoon cooking oil
  • 1 cup water
  • 1 teaspoon sugar (optional)

Instructions

  1. In a bowl, combine the chicken, soy sauce, and half of the garlic. Marinate for at least 30 minutes or up to overnight.
  2. Heat oil in a large pan over medium heat. Remove chicken from marinade (reserve marinade) and sear until lightly browned on both sides.
  3. Add the remaining garlic and cook briefly until fragrant.
  4. Pour in the reserved marinade, vinegar, water, bay leaves, and peppercorns. Do not stir immediately; let it come to a boil.
  5. Once boiling, lower the heat and simmer for 30 to 35 minutes until the chicken is tender.
  6. Add sugar if desired and simmer for another 5 minutes. Adjust seasoning to taste.
  7. Serve hot with steamed rice.

Notes

  • Avoid stirring right after adding vinegar to maintain its sharp flavor.
  • You can reduce the sauce further for a thicker consistency.
  • Leftovers taste even better the next day as flavors deepen.
