Description

This French Onion Chicken combines juicy seared chicken breasts with rich caramelized onions and melted gruyere cheese for a comforting, savory dinner. Inspired by classic French onion soup flavors, it is hearty, flavorful, and perfect for weeknight meals.


Ingredients

  • 3 tbsp butter
  • 2 large onions, sliced very thin
  • 1 cup broth
  • 4 medium chicken breasts
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp arrowroot powder (or cornstarch)
  • 1 cup grated gruyere cheese (mozzarella works as well)

Instructions

  1. Preheat oven to 400F.
  2. In a large skillet, heat 2 tbsp butter over medium-high heat.
  3. Add the sliced onions and 1/4 cup broth. Cook for 15-20 minutes until browned and softened.
  4. While the onions cook, pound the chicken breasts until evenly flattened to about 1 inch thick.
  5. Season both sides of the chicken with thyme, salt, and pepper.
  6. Transfer the cooked onions to a bowl. Add the remaining 1 tbsp butter to the skillet and add the chicken.
  7. Sear the chicken for 5 minutes per side. Remove chicken from the skillet and reduce heat to medium-low.
  8. In a small bowl, whisk together the remaining 3/4 cup broth and arrowroot powder.
  9. Return the onions to the skillet and add the broth mixture. Whisk and cook for 2-3 minutes until thickened.
  10. Return the chicken to the skillet and spoon the onions and sauce over each piece.
  11. Top each chicken breast with shredded gruyere cheese.
  12. Transfer the skillet to the oven and bake for 8-10 minutes, or until the chicken reaches an internal temperature of 165F.

Notes

  • Mozzarella cheese can be substituted for gruyere if desired.
  • Serve with mashed potatoes, rice, or roasted vegetables.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For extra flavor, use beef broth instead of chicken broth.
