Description
This French Onion Chicken combines juicy seared chicken breasts with rich caramelized onions and melted gruyere cheese for a comforting, savory dinner. Inspired by classic French onion soup flavors, it is hearty, flavorful, and perfect for weeknight meals.
Ingredients
- 3 tbsp butter
- 2 large onions, sliced very thin
- 1 cup broth
- 4 medium chicken breasts
- 1 tsp dried thyme
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp arrowroot powder (or cornstarch)
- 1 cup grated gruyere cheese (mozzarella works as well)
Instructions
- Preheat oven to 400F.
- In a large skillet, heat 2 tbsp butter over medium-high heat.
- Add the sliced onions and 1/4 cup broth. Cook for 15-20 minutes until browned and softened.
- While the onions cook, pound the chicken breasts until evenly flattened to about 1 inch thick.
- Season both sides of the chicken with thyme, salt, and pepper.
- Transfer the cooked onions to a bowl. Add the remaining 1 tbsp butter to the skillet and add the chicken.
- Sear the chicken for 5 minutes per side. Remove chicken from the skillet and reduce heat to medium-low.
- In a small bowl, whisk together the remaining 3/4 cup broth and arrowroot powder.
- Return the onions to the skillet and add the broth mixture. Whisk and cook for 2-3 minutes until thickened.
- Return the chicken to the skillet and spoon the onions and sauce over each piece.
- Top each chicken breast with shredded gruyere cheese.
- Transfer the skillet to the oven and bake for 8-10 minutes, or until the chicken reaches an internal temperature of 165F.
Notes
- Mozzarella cheese can be substituted for gruyere if desired.
- Serve with mashed potatoes, rice, or roasted vegetables.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- For extra flavor, use beef broth instead of chicken broth.
