Description

These fruity coconut water popsicles are light, refreshing, and naturally hydrating. Packed with fresh fruit and coconut water, they are a healthy frozen treat perfect for warm days.


Ingredients

  • 2 cups coconut water
  • 1 cup strawberries, sliced
  • 1 kiwi, peeled and sliced
  • 1/2 cup blueberries
  • 1/2 cup mango chunks
  • 1 tbsp honey or maple syrup
  • 1 tbsp fresh lime juice

Instructions

  1. Prepare the fruit by washing, peeling, and slicing as needed.
  2. Divide the strawberries, kiwi, blueberries, and mango evenly among popsicle molds.
  3. In a pitcher, stir together coconut water, honey or maple syrup, and lime juice.
  4. Pour the coconut water mixture into the molds, leaving a little space at the top.
  5. Insert popsicle sticks and freeze for at least 6 hours or until fully solid.
  6. To release the popsicles, run the molds briefly under warm water before serving.

Notes

  • Use any combination of fresh seasonal fruit you like.
  • For a sweeter popsicle, add extra honey or maple syrup.
  • Store popsicles in the freezer for up to 2 weeks.
