Description
These fruity coconut water popsicles are light, refreshing, and naturally hydrating. Packed with fresh fruit and coconut water, they are a healthy frozen treat perfect for warm days.
Ingredients
- 2 cups coconut water
- 1 cup strawberries, sliced
- 1 kiwi, peeled and sliced
- 1/2 cup blueberries
- 1/2 cup mango chunks
- 1 tbsp honey or maple syrup
- 1 tbsp fresh lime juice
Instructions
- Prepare the fruit by washing, peeling, and slicing as needed.
- Divide the strawberries, kiwi, blueberries, and mango evenly among popsicle molds.
- In a pitcher, stir together coconut water, honey or maple syrup, and lime juice.
- Pour the coconut water mixture into the molds, leaving a little space at the top.
- Insert popsicle sticks and freeze for at least 6 hours or until fully solid.
- To release the popsicles, run the molds briefly under warm water before serving.
Notes
- Use any combination of fresh seasonal fruit you like.
- For a sweeter popsicle, add extra honey or maple syrup.
- Store popsicles in the freezer for up to 2 weeks.
- Silicone molds make removing popsicles easier.
