Ingredients
- 1 packet instant yeast
- 3/4 cup + 2 tablespoons water
- 1 tablespoon white sugar
- 2 1/2 cups gluten free all purpose baking flour (with xanthan gum)
- 1 teaspoon salt
- 1 teaspoon baking powder
- 5 tablespoons olive oil
- 1 egg
- 1 teaspoon vinegar (white or apple cider)
Instructions
- Microwave the water for about 30 seconds until it reaches 110–115°F, ensuring it is warm but not too hot.
- Stir in the sugar and yeast, then let sit for 5 minutes until activated.
- In a separate bowl, whisk together the gluten free flour, baking powder, and salt.
- Add the egg, vinegar, olive oil, and the yeast mixture to the dry ingredients.
- Mix with a wooden spoon or spatula until a sticky dough forms.
- Cover with plastic wrap and a towel, then let rise in a warm place for 1 hour.
- Preheat the oven to 425°F and place the dough in the refrigerator for 15 minutes to firm up.
- Transfer the dough to floured parchment paper and knead in 1–2 tablespoons of additional flour until a smooth ball forms.
- Roll the dough into a roughly 12-inch circle using a floured rolling pin.
- Brush the crust with olive oil and bake for 12 minutes.
- Remove from the oven, add sauce and toppings, and bake for an additional 8–12 minutes until desired crispness is reached.
- Let cool for a few minutes, then slice and serve.
Notes
- Ensure your gluten free flour blend contains xanthan gum for best texture.
- If the dough is too sticky, add small amounts of flour gradually.
- For a crispier crust, bake a few extra minutes after adding toppings.
- This dough can be divided to make two smaller pizzas.
