Description
A rich and aromatic Greek mushroom stew simmered in a spiced tomato and wine sauce, balanced with a touch of honey. This hearty dish features a mix of mushrooms and caramelized onions for deep flavor.
Ingredients
- 1 1/2 pounds pearl onions or small shallots (defrosted, if frozen)
- 3/4 cup extra virgin olive oil
- 2 garlic cloves, sliced
- 1 tablespoon tomato paste
- 1 pound button mushrooms, quartered
- 1/4 pound shiitake mushrooms, halved or quartered
- 1/3 pound oyster mushrooms, torn into bite-size pieces
- 1 cup dry red wine
- 2 teaspoons sugar
- 1/2 teaspoon ground black pepper (or 8 whole peppercorns)
- 1/2 teaspoon ground allspice (or 6 whole allspice berries)
- 3/4 teaspoon ground cloves (or 10 whole cloves)
- 1 1/2 teaspoons ground cinnamon (or 1 cinnamon stick)
- 1 teaspoon dried oregano
- 2 bay leaves
- 1 (15 ounce) can tomato puree
- 1/2 teaspoon salt
- 1 to 2 cups water
- 3 tablespoons honey
Instructions
- Peel the pearl onions or shallots and halve any large ones. Set aside.
- Heat olive oil in a large pan over medium heat. Add onions and cook until lightly caramelized, about 8 minutes. Remove with a slotted spoon and set aside.
- Add garlic and tomato paste to the pan and cook for 1 minute. Add all mushrooms and sauté until browned, about 3 minutes.
- Pour in red wine and add sugar, black pepper, allspice, cloves, cinnamon, oregano, and bay leaves. Stir well.
- Return onions to the pan. Add tomato puree and salt. Pour in enough water to just cover the ingredients.
- Cover and simmer on medium-low heat for 30 minutes. Uncover and continue simmering for 20 to 30 minutes until the sauce thickens.
- Remove from heat and stir in honey. Remove any whole spices and serve.
Notes
- Use a mix of fresh mushrooms for best flavor and texture.
- If using whole spices, remember to remove them before serving.
- Serve with crusty bread, rice, or over pasta.
- Leftovers store well in the refrigerator for up to 4 days.
- The flavor improves the next day as the spices meld.
