Description

This green asparagus and Gruyère quiche is rich, savory, and packed with tender asparagus and nutty melted cheese in a flaky crust. Perfect for brunch, lunch, or a light dinner.


Ingredients

  • 1 pie crust
  • 1 bunch green asparagus, trimmed and cut into pieces
  • 1 cup Gruyère cheese, grated
  • 4 large eggs
  • 1 cup heavy cream
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat and sauté the onion until soft. Add the asparagus and cook for 3 to 4 minutes until slightly tender.
  3. Place the pie crust into a quiche or tart pan and prick the bottom with a fork.
  4. Spread the cooked asparagus and onions evenly over the crust, then sprinkle the Gruyère cheese on top.
  5. In a bowl, whisk together the eggs, heavy cream, milk, salt, pepper, and nutmeg.
  6. Pour the egg mixture over the asparagus and cheese filling.
  7. Bake for 35 to 40 minutes until the center is set and the top is lightly golden.
  8. Allow the quiche to cool slightly before slicing and serving.

Notes

  • You can substitute Gruyère with Swiss cheese or Emmental.
  • Blind baking the crust for 10 minutes helps prevent a soggy bottom.
  • Serve warm or at room temperature with a fresh salad.
