Ingredients
- 1 pie crust
- 1 bunch green asparagus, trimmed and cut into pieces
- 1 cup Gruyère cheese, grated
- 4 large eggs
- 1 cup heavy cream
- 1/2 cup milk
- 1 small onion, finely chopped
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat and sauté the onion until soft. Add the asparagus and cook for 3 to 4 minutes until slightly tender.
- Place the pie crust into a quiche or tart pan and prick the bottom with a fork.
- Spread the cooked asparagus and onions evenly over the crust, then sprinkle the Gruyère cheese on top.
- In a bowl, whisk together the eggs, heavy cream, milk, salt, pepper, and nutmeg.
- Pour the egg mixture over the asparagus and cheese filling.
- Bake for 35 to 40 minutes until the center is set and the top is lightly golden.
- Allow the quiche to cool slightly before slicing and serving.
Notes
- You can substitute Gruyère with Swiss cheese or Emmental.
- Blind baking the crust for 10 minutes helps prevent a soggy bottom.
- Serve warm or at room temperature with a fresh salad.
