Description

Juicy grilled shrimp skewers marinated in a zesty blend of olive oil, lemon, and spices, then quickly grilled to perfection. A light and flavorful dish perfect for any occasion.


Ingredients

  • 8 bamboo skewers
  • 1/4 cup olive oil
  • 1 tbsp lemon juice
  • 4 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp smoked paprika
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 lb large shrimp (31/40 size, peeled and deveined)

Instructions

  1. If using bamboo skewers, soak them in water for 30–60 minutes to prevent burning.
  2. In a large bowl, whisk together olive oil, lemon juice, minced garlic, Italian seasoning, smoked paprika, salt, and pepper.
  3. Add the shrimp and gently toss to coat. Marinate for 15–30 minutes.
  4. Preheat the grill for about 15 minutes over medium-high heat, or heat a grill pan for 3–5 minutes.
  5. Remove shrimp from marinade and thread onto skewers.
  6. Grill the shrimp skewers for 2–3 minutes until pink and slightly translucent on top. Flip and cook another 2–3 minutes until fully opaque.

Notes

  • Do not marinate shrimp longer than 30 minutes to avoid a mushy texture.
  • You can substitute lime juice for lemon juice for a different citrus flavor.
  • Serve with rice, salad, or grilled vegetables.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
