Tender grilled walleye topped with a bright and buttery citrus sauce, balancing richness with fresh lemon and orange flavors.
Ingredients
- 2 portions Sizzlefish Walleye
- Salt and pepper
- 4 tbsp butter
- 1/4 cup dry white wine or chicken stock
- 2 tbsp fresh lemon juice
- 1 tbsp fresh orange juice
- 1/2 tsp minced garlic
- 1 sprig fresh oregano
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Heat wine, lemon juice, orange juice, oregano sprig, and garlic over low heat in a saucepan. Bring to a simmer and cook for 3 minutes. Add butter one cube at a time until melted, then simmer for 2 minutes longer.
- Turn off heat, season with salt and pepper, and discard the oregano sprig.
- Heat a cast iron grill pan over medium heat and grease lightly with cooking oil. Allow the pan to heat for 2 minutes. Pat the walleye dry with a paper towel and season with salt and pepper.
- Place the walleye flesh side down on the pan and grill for 4 minutes. Flip and cook for another 3–4 minutes or until cooked through.
- Serve hot, drizzled with the citrus butter sauce.
Notes
- Chicken stock can be used instead of wine for a non-alcoholic option.
- Serve with steamed vegetables or rice for a complete meal.
- Do not overcook the fish to maintain its delicate texture.
- Sauce can be prepared slightly ahead and gently reheated.
