Ingredients

  • 1 cup natural peanut butter
  • 1/4 cup coconut flour
  • 1/4 cup maple syrup
  • 1 cup dairy-free chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. In a bowl, mix together peanut butter, coconut flour, and maple syrup until a thick dough forms.
  2. Scoop and shape the mixture into egg shapes and place on a parchment-lined tray.
  3. Freeze for 20–30 minutes until firm.
  4. In a microwave-safe bowl, melt chocolate chips with coconut oil in 20–30 second intervals, stirring until smooth.
  5. Dip each peanut butter egg into melted chocolate, coating evenly, then return to the tray.
  6. Refrigerate or freeze until chocolate is set.
  7. Serve chilled or at room temperature.
