This Healthy Apple Coleslaw is crisp, refreshing, and coated in a creamy yogurt dressing without mayo. Packed with crunchy cabbage, sweet-tart apples, and carrots, it’s a lighter side dish perfect for picnics and weeknight meals.
Ingredients
- 4 cups cabbage (finely shredded – green, red, or mixed)
- 2 Granny Smith apples, diced or sliced
- 1 cup carrots, grated
- 1 cup Greek yogurt (or non-dairy yogurt)
- 2 to 3 tablespoons apple cider vinegar
- 1 tablespoon honey (or sugar)
- 2 teaspoons Dijon mustard (or yellow mustard)
- 1/2 teaspoon salt
- Black pepper, to taste
- 1 to 2 tablespoons mayonnaise (optional)
Instructions
- Finely shred the cabbage and dice the Granny Smith apples. Add them to a large bowl along with the grated carrots.
- In a separate bowl, whisk together the Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth. Adjust the flavor with more vinegar for extra tang or more honey for sweetness if desired. For a richer dressing, whisk in the optional mayonnaise.
- Pour the dressing over the slaw mixture and toss well until evenly coated.
- Let the coleslaw sit for 10–15 minutes before serving so the flavors meld and the cabbage softens slightly.
Notes
- Use non-dairy yogurt to make the recipe dairy-free.
- Granny Smith apples add tartness, but Honeycrisp or Fuji apples also work well.
- Store leftovers in an airtight container in the refrigerator for up to 2 days.
