Description

This healthy stuffed pepper soup is packed with lean ground beef, colorful peppers, tomatoes, and cauliflower rice for a hearty low-carb twist on the classic dish. It’s comforting, flavorful, and perfect for meal prep.


Ingredients

  • 1 lb ground beef (can use turkey or chicken)
  • 2 tbsp olive oil, divided
  • 1 small yellow onion, diced
  • 1 small red pepper, deseeded and diced
  • 1 small green pepper, deseeded and diced
  • 2 cloves garlic, minced
  • 2 14.5 oz cans fire roasted diced tomatoes
  • 1 15 oz can tomato sauce
  • 1/4 cup chopped parsley
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper
  • 23 cups beef broth, depending on desired thickness
  • 3 cups frozen cauliflower rice

Instructions

  1. Heat 1 tablespoon olive oil in a large pot or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until fully browned. Drain excess grease and set aside.
  2. In the same pot, add the remaining olive oil. Add the diced onion and peppers and cook for about 5 minutes, until softened.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Stir in the fire roasted diced tomatoes, tomato sauce, and chopped parsley. Return the cooked meat to the pot.
  5. Add the basil, oregano, salt, pepper, and beef broth. Stir well and simmer over low heat for 20 minutes, stirring occasionally.
  6. During the last 5 minutes of cooking, stir in the frozen cauliflower rice and cook until heated through.
  7. Serve warm with optional cheese and extra parsley if desired.

Notes

  • Ground turkey or chicken can be substituted for ground beef.
  • Use more broth for a thinner soup consistency.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • This soup freezes well for up to 3 months.
  • Top with shredded cheese, fresh parsley, or crushed red pepper for extra flavor.
