Description

Juicy chicken cutlets coated in a rich, sweet and tangy honey mustard sauce, perfect for a quick and satisfying main course.


Ingredients

  • 2 x 9oz/250g chicken breasts
  • 1/4 cup / 35g plain flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 tbsp / 15g unsalted butter
  • 2 cloves garlic, finely diced
  • 3/4 cup / 180ml chicken stock
  • 3 tbsp honey
  • 1 1/2 tbsp Dijon mustard
  • 1 tbsp wholegrain mustard
  • 4 sprigs fresh thyme
  • 1 tbsp / 15g unsalted butter (chilled)

Instructions

  1. Horizontally slice each chicken breast through the center to create 4 even-sized cutlets.
  2. In a shallow dish, mix the flour, salt, and black pepper. Coat each chicken cutlet in the flour mixture, shaking off excess, and set aside.
  3. Heat a large pan over medium-high heat with olive oil and butter. Once hot, add the chicken cutlets and cook for 3–4 minutes per side until golden and cooked through. Remove and set aside, leaving excess fat in the pan.
  4. Reduce heat to medium and sauté the garlic for about 30 seconds until fragrant, ensuring it does not burn. Pour in the chicken stock, then whisk in the honey, Dijon mustard, and wholegrain mustard until combined. Add the thyme and simmer for 3–5 minutes until the sauce thickens.
  5. Stir in the resting juices from the chicken, then add the chilled butter and stir until fully incorporated, creating a glossy, slightly thick sauce. Adjust seasoning if needed.
  6. Return the chicken to the pan and baste with the sauce. Serve warm.

Notes

  • Chicken thighs can be used instead of breasts for a juicier result.
  • Adjust the sweetness by adding more or less honey to taste.
  • Remove thyme stems before serving for easier eating.
  • Serve with rice, mashed potatoes, or steamed vegetables.
