Description
These brined chicken wings are juicy, flavorful, and perfectly seasoned with herbs, garlic, and spices before being broiled until crispy and golden. A simple overnight brine makes every bite tender and delicious.
Ingredients
- 1 1/2 gallons water, more or less as needed
- 1 tablespoon minced garlic (approximately 6 cloves)
- 1/2 cup sea salt
- 1 tablespoon paprika
- 1 tablespoon dried oregano
- 1 tablespoon dried basil
- 1 tablespoon dried chili pepper
- 1 1/2 pounds chicken wings (flats and drums, defrosted if frozen)
- Crushed red pepper flakes, for garnish
- Chopped fresh herbs, for garnish
- Ranch dressing, for serving
- Blue cheese dressing, for serving
Instructions
- In a large stockpot, combine the water, minced garlic, sea salt, paprika, dried oregano, dried basil, and dried chili pepper. Stir well until the salt is dissolved and the seasonings are evenly distributed.
- Add the chicken wings to the brine. Cover the stockpot and refrigerate for 8 to 12 hours.
- Position an oven rack 8 to 10 inches below the broiler and preheat the broiler to high. Line a large baking sheet with parchment paper.
- Remove the wings from the brine and pat them completely dry with paper towels. Arrange them in a single layer on the prepared baking sheet.
- Broil the wings for 10 minutes, then carefully flip each wing over.
- Return the wings to the oven and broil for an additional 10 to 15 minutes, or until the wings are crisp and reach an internal temperature of 160°F.
- Remove the wings from the oven and let them rest for 5 minutes before serving.
- Garnish with crushed red pepper flakes and fresh herbs if desired. Serve with ranch dressing or blue cheese dressing.
Notes
- Patting the wings dry helps them crisp up better under the broiler.
- You can substitute smoked paprika for extra smoky flavor.
- For even crispier wings, place them on a wire rack over the baking sheet.
- Leftover wings can be refrigerated in an airtight container for up to 3 days.
