Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon cayenne pepper
- 2 eggs
- Vegetable oil, for frying
Instructions
- Place the chicken pieces in a bowl with the buttermilk and let marinate for at least 20 minutes.
- In a separate bowl, whisk together the flour, cornstarch, salt, pepper, paprika, garlic powder, onion powder, and cayenne pepper.
- Beat the eggs in another bowl.
- Remove the chicken from the buttermilk. Dip each piece into the egg mixture, then coat thoroughly in the seasoned flour mixture.
- Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).
- Fry the chicken pieces in batches for 4 to 5 minutes, or until golden brown and cooked through.
- Transfer to a paper towel-lined plate to drain excess oil.
- Serve hot with your favorite dipping sauces.
Notes
- For extra crispiness, double coat the chicken by dipping it in the flour mixture twice.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat in an air fryer or oven to maintain crispiness.
- Serve with ranch, honey mustard, or spicy mayo.
