Ingredients
- 1 cup rolled oats
- 1 heaping cup Medjool dates, pitted
- 3/4 cup almond flour
- 1/2 cup shredded coconut, unsweetened, plus more for coating
- 2 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1/8 teaspoon almond extract, optional
- 1/4 teaspoon salt
Instructions
- Add the rolled oats, Medjool dates, almond flour, shredded coconut, lemon juice, lemon zest, vanilla extract, optional almond extract, and salt to a food processor.
- Blend until the mixture sticks together when pressed between your fingers, scraping down the sides as needed.
- If the mixture is too dry, add 1 teaspoon of lemon juice or water at a time until it comes together.
- Scoop about 1 tablespoon of mixture and roll between your hands to form balls.
- Roll each ball in additional shredded coconut to coat.
- Enjoy immediately or chill for 20 minutes for the best texture. Store in the refrigerator or freeze for later.
