Description

These Lemon Energy Balls are naturally sweetened, bright, and refreshing with a soft chewy texture. Made with wholesome ingredients and no baking required, they are perfect for a quick snack or healthy dessert.


Ingredients

  • 1 cup rolled oats
  • 1 heaping cup Medjool dates, pitted
  • 3/4 cup almond flour
  • 1/2 cup shredded coconut, unsweetened, plus more for coating
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon almond extract, optional
  • 1/4 teaspoon salt

Instructions

  1. Add the rolled oats, Medjool dates, almond flour, shredded coconut, lemon juice, lemon zest, vanilla extract, optional almond extract, and salt to a food processor.
  2. Blend until the mixture sticks together when pressed between your fingers, scraping down the sides as needed.
  3. If the mixture is too dry, add 1 teaspoon of lemon juice or water at a time until it comes together.
  4. Scoop about 1 tablespoon of mixture and roll between your hands to form balls.
  5. Roll each ball in additional shredded coconut to coat.
  6. Enjoy immediately or chill for 20 minutes for the best texture. Store in the refrigerator or freeze for later.
