Description
A creamy and tangy lemon garlic tahini dressing with a smooth texture and bright flavor, perfect for salads, bowls, and roasted vegetables.
Ingredients
- 1/2 cup tahini
- 2 tablespoons olive oil
- 1/4 cup fresh lemon juice (about 2 large lemons)
- 1/2 teaspoon salt
- 1 teaspoon dijon mustard
- 1 teaspoon maple syrup
- 3 cloves garlic, finely minced
- 1/4 cup + 2 tablespoons water (or more as needed)
Instructions
- Finely mince the garlic.
- Add the tahini, olive oil, lemon juice, salt, dijon mustard, maple syrup, and minced garlic to a bowl or jar. Start with 1/4 cup of water.
- Whisk or shake well until fully combined and smooth.
- Add the remaining 2 tablespoons of water as needed to thin the dressing to your desired consistency.
- If the dressing is still too thick, add additional water a tablespoon at a time until smooth and pourable.
- Taste and adjust flavors as desired, adding more maple syrup if needed to balance bitterness.
- Serve with your favorite salad or dish.
Notes
- Tahini thickness varies, so adjust water gradually for best consistency.
- If the dressing thickens over time, whisk in a little more water before serving.
- Store in an airtight container in the refrigerator for up to 5 days.
- Great as a dip, drizzle for grain bowls, or sauce for roasted vegetables.
