Description

Juicy, flavorful Greek-style chicken thighs marinated in a zesty blend of lemon, herbs, and olive oil, then seared and oven-finished to golden perfection.


Ingredients

  • 6 large chicken thighs (bone-in and skin-on)
  • 1/4 cup plus 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 11/2 tablespoons red wine vinegar
  • 2 teaspoons Dijon mustard
  • 3 teaspoons dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Whisk together the olive oil, lemon juice, lemon zest, red wine vinegar, Dijon mustard, oregano, basil, salt, and pepper in a medium bowl to create the marinade.
  2. Pat the chicken thighs dry with paper towels.
  3. Place the chicken thighs in a large bowl and pour the marinade over them, ensuring all pieces are well coated.
  4. Cover and refrigerate for at least 1 hour, or up to 12 hours for deeper flavor.
  5. Preheat the oven to 400°F (200°C).
  6. Heat a skillet over medium heat with a little oil. Add the chicken thighs skin-side down and cook for 7–9 minutes until golden and they release easily from the pan.
  7. Turn the chicken and cook for 5–6 minutes on the other side until lightly browned.
  8. Transfer the skillet to the oven and roast for 15–20 minutes, or until the chicken is fully cooked and no longer pink inside.
  9. Remove from the oven and let the chicken rest for 3–5 minutes before serving.

Notes

  • For best flavor, marinate the chicken overnight but no longer than 12 hours.
  • Serve with roasted vegetables, rice, or a fresh Greek salad.
  • You can use boneless chicken thighs, but adjust cooking time accordingly.
  • A meat thermometer should read 75°C (165°F) when the chicken is done.
