Description

Fluffy pancakes inspired by the flavors of traditional Greek melomakarona, infused with honey, orange, and warm spices.


Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 2 eggs
  • 1 1/2 cups milk
  • 2 tbsp olive oil
  • 2 tbsp honey
  • Zest of 1 orange
  • 1 tsp vanilla extract
  • Butter or oil for cooking
  • Chopped walnuts for serving
  • Extra honey for serving

Instructions

  1. In a bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, cloves, and salt.
  2. In another bowl, whisk the eggs, milk, olive oil, honey, orange zest, and vanilla extract.
  3. Gradually add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix.
  4. Heat a non-stick pan over medium heat and lightly grease with butter or oil.
  5. Pour small portions of batter into the pan and cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Repeat with the remaining batter.
  7. Serve warm with extra honey drizzled on top and chopped walnuts.

Notes

  • You can substitute milk with plant-based milk for a dairy-free version.
  • Add a splash of orange juice for extra citrus flavor.
  • Serve with yogurt or chocolate spread for variation.
