Description

These delicate meringue mushrooms are light, crisp, and slightly sweet, finished with chocolate and cocoa for a realistic woodland look. Perfect for decorating cakes and desserts.


Ingredients

  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 3/4 cup fine sugar
  • 1/2 cup melted dark or milk chocolate
  • 1 tablespoon cocoa powder

Instructions

  1. Preheat the oven to 250°F (120°C) and line baking sheets with parchment paper.
  2. In a stand mixer, whisk egg whites and cream of tartar on medium speed for 3 to 4 minutes until soft peaks form.
  3. Increase speed to medium-high and gradually add sugar over 30 to 45 seconds.
  4. Turn speed to high and whisk for 2 to 3 minutes until stiff peaks form.
  5. Transfer meringue to a piping bag fitted with a 1/4-inch to 1/2-inch round tip.
  6. Pipe half the meringue into small round dollops on the prepared baking sheet to form mushroom caps.
  7. Pipe the remaining meringue into stem shapes by squeezing and pulling upward to create a tapered look.
  8. Bake for about 45 minutes until dry and crisp.
  9. Cool at room temperature for 20 minutes.
  10. Use a skewer to make a small hole in the bottom of each cap.
  11. Brush melted chocolate on the underside of the caps and inside the hole to resemble gills.
  12. Insert the pointed end of each stem into the hole to assemble the mushrooms.
  13. Lightly dust the tops with cocoa powder before serving.
