Description
Mom’s Pineapple Sheera, also known as Ananas Kesari, is a rich and aromatic Indian dessert made with roasted semolina, juicy pineapple, saffron, and ghee. This comforting sweet dish is perfect for festive occasions or special family meals.
Ingredients
- 3/4 cup ghee
- 1 cup fine sooji (rava)
- 1/4 cup wheat flour
- 2 tablespoons besan
- 3 to 4 cups fresh pineapple, cut into 1/2 inch cubes
- 1 cup sugar
- 3 cups water
- 1 pinch saffron
- 1 tablespoon sliced almonds
- 1 tablespoon sliced pistachios
Instructions
- Heat the ghee in a medium non-stick pan over medium-low heat. Add the sooji, wheat flour, and besan. Roast while stirring frequently until the mixture turns golden brown and fragrant, about 5 to 7 minutes.
- In a separate pot, combine the pineapple, sugar, and water. Bring to a full boil, stirring occasionally, and cook for 10 to 15 minutes.
- Carefully pour the hot pineapple syrup mixture into the roasted flour mixture. Reduce the heat to low and stir continuously until well combined. The mixture may splatter.
- Add the saffron, cover the pan, and cook on low heat for 2 to 3 minutes.
- Turn off the heat and let the sheera rest covered for 5 minutes.
- Garnish with sliced almonds and pistachios before serving warm.
Notes
- You can shape the sheera into molds for elegant individual servings.
- Fresh pineapple gives the best flavor, but canned pineapple can be used if needed.
- Adjust the sugar slightly depending on the sweetness of the pineapple.
- Serve warm for the best texture and aroma.
- Store leftovers in the refrigerator for up to 3 days and reheat gently before serving.
