Ingredients
- 1 pound ground beef
- 2 cups uncooked egg noodles
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can cream of mushroom soup
- 1 can diced tomatoes, drained
- 1 cup sour cream
- 2 cups cheddar cheese, shredded
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 350°F and grease a casserole dish.
- Cook the egg noodles according to package directions, then drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened.
- Add garlic and ground beef to the skillet. Cook until the beef is browned and fully cooked, draining excess grease if needed.
- Season the beef mixture with Italian seasoning, salt, and black pepper.
- Stir in the cream of mushroom soup, diced tomatoes, and sour cream until combined.
- Add the cooked noodles and half of the shredded cheese to the skillet and mix well.
- Transfer the mixture to the prepared casserole dish and top with the remaining cheese.
- Bake uncovered for 25 to 30 minutes, or until hot and bubbly.
- Garnish with fresh parsley before serving.
Notes
- Ground turkey can be substituted for ground beef.
- Add mushrooms or bell peppers for extra vegetables.
- Store leftovers in the refrigerator for up to 4 days.
