Description

This one-pot spicy sausage tortellini is a rich, creamy, and comforting dish packed with bold flavors and tender pasta. Perfect for a quick and satisfying weeknight dinner.


Ingredients

  • Drizzle of olive oil
  • 2 shallots, finely diced
  • 4 cloves garlic, finely diced
  • 400g sausage meat
  • 2 tablespoons tomato puree (tomato paste)
  • 1 teaspoon dried chilli flakes
  • 1 x 400g can chopped tomatoes
  • 240ml chicken stock
  • 240ml double/heavy cream, at room temperature
  • 500g uncooked fresh cheese tortellini
  • 2 heaped tablespoons fresh parsley, finely diced
  • 20g freshly grated Parmesan
  • 100g baby spinach leaves
  • Salt and pepper, to taste

Instructions

  1. Heat a drizzle of olive oil in a large pot over medium heat. Add the shallots and cook for 2 minutes, then add the garlic and cook for 30 seconds without browning.
  2. Add the sausage meat, breaking it apart as it cooks until browned and fully cooked through.
  3. Stir in the chilli flakes and tomato puree, cooking for 1 minute to deepen the flavor.
  4. Add the chopped tomatoes, chicken stock, and cream. Stir well, then add the uncooked tortellini.
  5. Simmer for about 5 minutes, stirring occasionally, until the tortellini is nearly cooked and the sauce begins to thicken.
  6. Stir in the Parmesan and parsley until incorporated, then add the spinach and cook until wilted.
  7. Adjust the consistency with a splash of hot stock or water if needed. Season with salt and pepper to taste.
  8. Serve immediately, garnished with extra parsley and Parmesan if desired.
