Description
This one-pot spicy sausage tortellini is a rich, creamy, and comforting dish packed with bold flavors and tender pasta. Perfect for a quick and satisfying weeknight dinner.
Ingredients
- Drizzle of olive oil
- 2 shallots, finely diced
- 4 cloves garlic, finely diced
- 400g sausage meat
- 2 tablespoons tomato puree (tomato paste)
- 1 teaspoon dried chilli flakes
- 1 x 400g can chopped tomatoes
- 240ml chicken stock
- 240ml double/heavy cream, at room temperature
- 500g uncooked fresh cheese tortellini
- 2 heaped tablespoons fresh parsley, finely diced
- 20g freshly grated Parmesan
- 100g baby spinach leaves
- Salt and pepper, to taste
Instructions
- Heat a drizzle of olive oil in a large pot over medium heat. Add the shallots and cook for 2 minutes, then add the garlic and cook for 30 seconds without browning.
- Add the sausage meat, breaking it apart as it cooks until browned and fully cooked through.
- Stir in the chilli flakes and tomato puree, cooking for 1 minute to deepen the flavor.
- Add the chopped tomatoes, chicken stock, and cream. Stir well, then add the uncooked tortellini.
- Simmer for about 5 minutes, stirring occasionally, until the tortellini is nearly cooked and the sauce begins to thicken.
- Stir in the Parmesan and parsley until incorporated, then add the spinach and cook until wilted.
- Adjust the consistency with a splash of hot stock or water if needed. Season with salt and pepper to taste.
- Serve immediately, garnished with extra parsley and Parmesan if desired.
