Ingredients
- 1 cup sugar
- 2 cups all-purpose flour
- 3 eggs
- 4 teaspoons baking powder
- 1 cup orange juice
- 1/2 cup vegetable oil
- Zest of 1 orange
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 180°C (350°F) and grease a cake pan.
- In a large bowl, beat the eggs with the sugar until light and fluffy.
- Add the vegetable oil, orange juice, orange zest, and vanilla extract, and mix well.
- In a separate bowl, combine the flour and baking powder.
- Gradually add the dry ingredients to the wet mixture, stirring until smooth.
- Pour the batter into the prepared cake pan.
- Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool before slicing and serving.
Notes
- You can dust the cake with powdered sugar or drizzle with orange glaze for extra flavor.
- Store at room temperature in an airtight container for up to 3 days.
- Substitute vegetable oil with light olive oil for a more Mediterranean flavor.
