Ingredients
- 1 lb ground chicken
- 1 egg
- 1/4 cup almond flour
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp turmeric
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh cilantro, chopped
- 1 tbsp olive oil
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, combine ground chicken, egg, almond flour, garlic, ginger, turmeric, cumin, coriander, salt, pepper, and cilantro. Mix until just combined.
- Form mixture into small meatballs and place evenly on the prepared baking sheet.
- Lightly brush or drizzle olive oil over the meatballs.
- Bake for 18–22 minutes or until fully cooked through and golden on the outside.
- Serve warm with your favorite dipping sauce or side dish.
Notes
- Do not overmix the meat to keep meatballs tender.
- These freeze well; store cooked meatballs in an airtight container for up to 3 months.
- Serve with cauliflower rice or a fresh salad for a paleo-friendly meal.
- You can pan-fry instead of baking for a crispier exterior.
