Description

Flavorful turmeric-spiced chicken meatballs that are juicy, wholesome, and perfect for a healthy meal or snack.


Ingredients

  • 1 lb ground chicken
  • 1 egg
  • 1/4 cup almond flour
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tsp turmeric
  • 1/2 tsp cumin
  • 1/2 tsp coriander
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh cilantro, chopped
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, egg, almond flour, garlic, ginger, turmeric, cumin, coriander, salt, pepper, and cilantro. Mix until just combined.
  3. Form mixture into small meatballs and place evenly on the prepared baking sheet.
  4. Lightly brush or drizzle olive oil over the meatballs.
  5. Bake for 18–22 minutes or until fully cooked through and golden on the outside.
  6. Serve warm with your favorite dipping sauce or side dish.

Notes

  • Do not overmix the meat to keep meatballs tender.
  • These freeze well; store cooked meatballs in an airtight container for up to 3 months.
  • Serve with cauliflower rice or a fresh salad for a paleo-friendly meal.
