Description
A simple and classic Spanish tomato bread featuring toasted rustic bread rubbed with garlic and topped with fresh grated tomatoes and olive oil. Quick, vibrant, and full of Mediterranean flavor.
Ingredients
- 4 ripe Roma tomatoes
- 5 tablespoons olive oil
- 4 to 5 garlic cloves
- 4 slices rustic artisanal bread (French, Italian, or sourdough)
- Salt, to taste
- Freshly ground black pepper, to taste
- Fresh parsley, finely minced (optional)
Instructions
- Slice tomatoes in half and remove stems. Grate the flesh side of the tomatoes over a strainer set on a bowl, stopping at the skin. Discard skins and excess liquid.
- Transfer the strained tomato pulp to a bowl.
- Stir in 2 tablespoons olive oil, salt, and pepper. Let sit at room temperature.
- Heat remaining olive oil in a pan over low-medium heat with garlic cloves.
- Add bread slices and toast for 1–2 minutes per side until golden brown.
- Remove bread and garlic. Once cool enough, rub the softened garlic onto the toasted bread.
- Spoon the tomato mixture over the bread, garnish with parsley if desired, and serve immediately.
