- 1/2 cup finely diced cucumber
- 2 poblano peppers or jalapeños, finely chopped, or 1/2 green bell pepper for a milder version
- 1/4 red onion, finely diced
- 1/4 cup fresh parsley or cilantro, finely chopped
- Juice of 1/2 lime
- Pinch of salt
- 1 tablespoon olive oil
Instructions
- Finely dice the peaches, cucumber, peppers, and red onion into small, even pieces.
- Add the chopped ingredients to a mixing bowl.
- Stir in the parsley or cilantro, lime juice, salt, and olive oil.
- Toss well until everything is evenly combined.
- Serve immediately with tortilla chips, tacos, grilled meats, or enjoy on its own.
- Store leftovers in the refrigerator and enjoy the same day for best flavor.
Notes
- Use jalapeños for extra heat or green bell pepper for a mild salsa.
