Description

Ingredients

  • 2 cups peaches, finely chopped (about 3 peaches)
  • 1/2 cup finely diced cucumber
  • 2 poblano peppers or jalapeños, finely chopped, or 1/2 green bell pepper for a milder version
  • 1/4 red onion, finely diced
  • 1/4 cup fresh parsley or cilantro, finely chopped
  • Juice of 1/2 lime
  • Pinch of salt
  • 1 tablespoon olive oil

Instructions

  1. Finely dice the peaches, cucumber, peppers, and red onion into small, even pieces.
  2. Add the chopped ingredients to a mixing bowl.
  3. Stir in the parsley or cilantro, lime juice, salt, and olive oil.
