Description

These peanut chicken lettuce wraps are savory, slightly sweet, and packed with bold flavor. Wrapped in crisp lettuce leaves, they make a fresh and satisfying meal or appetizer.


Ingredients

  • 5 tablespoons low sodium tamari (or soy sauce)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon rice vinegar
  • 1 tablespoon peanut butter
  • 2 teaspoons honey
  • 1 tablespoon sweet chili sauce
  • 1 1/2 teaspoons cornstarch
  • 1 tablespoon toasted sesame or peanut oil
  • 1/2 white or yellow onion (diced)
  • 1 cup diced bell pepper (red and green)
  • 1 tablespoon minced garlic
  • 1 tablespoon freshly grated ginger
  • 1 pound ground chicken
  • 1 head butter or romaine lettuce
  • 1/3 cup diced cilantro or green onion (or both)
  • 1/2 cup crushed peanuts

Instructions

  1. In a bowl, whisk together tamari, sesame oil, rice vinegar, peanut butter, honey, sweet chili sauce, and cornstarch to make the sauce. Set aside.
  2. Heat a skillet over medium-high heat and add the oil. Add diced onion and bell peppers and sauté for about 5 minutes until softened.
  3. Add garlic and ginger and cook for 1 minute until fragrant.
  4. Add ground chicken and cook until fully browned and no pink remains.
  5. Pour in the prepared sauce, reduce heat to medium-low, and simmer for about 10 minutes to allow flavors to blend and sauce to thicken.
  6. Taste and adjust seasoning if needed.
  7. Spoon the chicken mixture into lettuce leaves, doubling leaves if needed for support.
  8. Top with cilantro or green onion and crushed peanuts before serving.

Notes

  • Use butter lettuce for softer wraps or romaine for extra crunch.
  • For a spicier version, add extra chili sauce or red pepper flakes.
  • Ground turkey can be substituted for chicken.
  • Store leftover filling in the refrigerator for up to 3 days.
  • Serve with extra peanut sauce for added richness.
