Ingredients

  • 9 oz tri-colored tortellini
  • 1/3 cup pesto
  • 1 cup sundried tomatoes
  • 2 cups pitted green olives, preferably in oil and seasoning from an olive bar
  • 4 oz peppered salami
  • 8 oz white sharp cheddar, cubed
  • Large party toothpicks

Instructions

  1. Cook the tortellini according to package directions, reducing the cooking time by 1 minute for a firmer texture. Drain, rinse under cold water, and let cool completely.
  2. Toss the cooled tortellini gently with the pesto until evenly coated.
  3. Assemble each bite by threading one tortellini, one sundried tomato, one olive, one folded slice of salami, and one cube of cheddar onto a toothpick.
  4. Repeat until all ingredients are used. Drizzle with additional pesto before serving if desired.
