Ingredients

- 1/3 cup pesto
- 1 cup sundried tomatoes
- 2 cups pitted green olives, preferably in oil and seasoning from an olive bar
- 4 oz peppered salami
- 8 oz white sharp cheddar, cubed
- Large party toothpicks
Instructions
- Cook the tortellini according to package directions, reducing the cooking time by 1 minute for a firmer texture. Drain, rinse under cold water, and let cool completely.
- Toss the cooled tortellini gently with the pesto until evenly coated.
- Assemble each bite by threading one tortellini, one sundried tomato, one olive, one folded slice of salami, and one cube of cheddar onto a toothpick.
- Repeat until all ingredients are used. Drizzle with additional pesto before serving if desired.
