Description

Ingredients

  • 1 cup butter, softened
  • 2 cups sugar
  • 3 large eggs, room temperature

  • 4 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/4 cup butter, softened
  • 3 to 4 cups powdered sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • Strawberry jam or raspberry jam
  • 3 to 4 tbsp 2% milk
  • Red food coloring, optional
  • Pink colored sprinkles, optional

Instructions

  1. Preheat the oven to 350 degrees F and grease baking sheets.
  2. Cream together 1 cup butter and sugar in a large bowl for 5 to 7 minutes until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition.
  4. Mix in the ricotta cheese, vanilla extract, and almond extract.
  5. In a separate bowl, whisk together the flour, salt, and baking soda.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  7. Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 11 to 14 minutes or until the cookies are lightly browned.
  9. Transfer cookies to wire racks and cool completely.
  10. For the frosting, cream together 1/4 cup butter, powdered sugar, vanilla extract, almond extract, and enough milk to create a spreadable consistency.
  11. Add red food coloring if desired for a deeper pink frosting.
  12. Frost the cooled cookies and top immediately with pink sprinkles if desired.
